NUTRITION HOTLINE: Benefits of Leafy Greens?

Q: Why do I need leafy greens?

A: Leafy greens, including romaine lettuce, spinach, kale, Swiss chard and mustard greens, are high in antioxidants, which help the body to naturally detoxify and may reduce the risk of cancer. They are also rich in vitamins, phytochemicals, and minerals that might help prevent a variety of diseases including osteoporosis, hypertension, macular degeneration, and arthritis. In order for the vitamins and phytochemicals to be absorbed, the leafy greens need to be eaten with some fat, so have dressing on your romaine salad, or try olive oil, garlic and prosciutto sauteed with kale or Swiss chard. Frozen, chopped spinach is very easy to prepare in the microwave with a little olive oil and basil.
